Due to the demands of inspected processing, we will only be accepting boneless meat for further processing this deer season.

It is our commitment to continue our pledge of quality that "The Meat you bring in is the Meat you take home".  While there are many places to get a deer skinned or even processed we believe that hunters want to feel confident that the meat they bring is truly the meat that they receive in the end.  We value your patrongage and will do our very best to make our service and your finished products the best they have been.

SWEET BOLOGNA

Our Sweet Bologna is basically the same as it’s been for the last 30 years.  It is an old fashioned Penna. Dutch Sweet Bologna, fully sweet and not too spicy.  There are many factors that effect the final outcome of bologna, such as the diet your deer had, the activity it was doing before being shot, and how it was cared for after being shot.  Because all of these factors are out of our control each batch of bologna may respond differently to the curing process thus resulting in a product that will vary a bit from deer to deer. It should be ready to eat when you pick it up. To keep your bologna from spoiling we recommend that you keep in the refrigerator only what you can use in a week or two and freeze the rest.

DEER JERKY

We make a whole muscle jerky.  This means we can only use good cuts of meat.  Typically we will use the hind legs or the loins.  Very little can be used from the front quarters.  The chunks of meat are frozen then partially thawed to allow for uniform thickness in the slicing.  After it is sliced it is mixed with Smucker’s Jerky seasoning and hand laid on screens before going in the smokehouse.  The drying/smoking time is 8-10 hours.  Jerky is labor intensive with numerous steps to the finished dried product.  We are very proud of our jerky and believe we can make you a believer also.  Jerky should not need to be refrigerated.

DEER SNACK STICKS

We offer 3 different flavors of snack sticks: Sweet, Mild & Hot.  The mild and hot are much like a Slim Jim but the sweet is fashioned after our sweet bologna.  We have received many good comments on these products and hope you will consider trying one.  The way in which we process them gives a long shelf life and should keep well in your refrigerator for 30 days.
